Perfect Pumpkin Pie


Ingredients

  • 1 (15 oz.) can pumpkin (about 2 cups)
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 (9-inch) unbaked pie crust

  • Instructions

    • HEAT oven to 425°F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust.
    • BAKE 15 minutes. Reduce oven temperature to 350°F; bake an additional 35 to 40 minutes or until knife inserted 1-inch from crust comes out clean. Cool. Garnish as desired.
    • FAVORITE TOPPINGS
    • SOUR CREAM TOPPING: COMBINE 1 1/2 cups sour cream, 2 tablespoons sugar and 1 teaspoon vanilla extract in medium bowl. After pie has baked 30 minutes at 350ºF, spread evenly over top. Bake 10 minutes.
    • STREUSEL TOPPING: COMBINE 1/2 cup packed brown sugar and 1/2 cup flour in medium bowl. Cut in 1/4 cup cold butter until mixture resembles coarse crumbs. Stir in 1/4 cup chopped nuts. After pie has baked 30 minutes at 350ºF, sprinkle evenly over top. Bake an additional 10 minutes.
    • CHOCOLATE GLAZE: MELT 1/2 cup semi-sweet chocolate chips and 1 teaspoon shortening in small saucepan over low heat. Drizzle or spread over top of baked pie.

Come Back Sauce




1 cup Duke’s mayonnaise (one of my Favorites)
1/4  cup Heinz ketchup
1/4 cup chili sauce  ( I prefer Heinz or DelMonte.  DO NOT substitute Thai Chili Sauce)
1 heaping teaspoon Dijon mustard
1 teaspoon onion powder
1/2 teaspoon garlic powder
2 teaspoons Worcestershire sauce
1 teaspoon ground black pepper
1/4 teaspoon Tabasco sauce
1/4 cup light olive oil
juice of one lemon
Mix all ingredients well and store in refrigerator overnight.  It needs to sit to let the flavors become “acquainted”.   They shouldn’t rush into marriage.

Chicken Broccoli and Cheese Casserole


3 chicken breasts, cooked & shredded

2 cans of cream of chicken soup

1 cup of mayo

1 cup shredded cheddar cheese

1 cup colby & monterrey jack cheese

1 bag frozen broccoli,thawed and chopped

salt & pepper to taste

Cook chicken & shred. Meanwhile, chop the broccoli. Okay…so we used frozen broccoli, and while I know they make the frozen chopped broccoli, the store was OUT. SO, I chopped my own…and it didn’t take any time.

Mix all ingredients together.

Cook at 375 for 30 minutes

Graceland Hamburger Steak



Ingredients
1 lbground Beef
1 lgegg
1/4 citalian bread crumbs
1/2 cparmesan cheese
1/2 tsppepper
1/2 tspseasoning salt
1/2 tsponion powder
1/2 tspgarlic powder
1 Tbspworcestershire sauce
1 Tbspvegetable oil
1 cThinly sliced onions
1 call purpose flour
1 can(s)beef broth, reduced sodium
1/2 tspseasoning salt

Directions

In a large bowl, mix together the ground beef, egg, breadcrumbs, parmesan cheese, pepper, salt, onion & garlic powders, and worcestershire sauce.

Form into 8 balls, and flatten into patties. In a small bowl with the flour, dip the patties in the flour until the whole patty is nicely covered with a light covering of flour.

Heat the oil in a large skillet over medium heat. Fry the patties and the onion slices in the oil until patties are nicely browned. About 4 minutes each side...I fry them a little longer...I like them crispy! Remove the beef patties to a plate and keep them warm.

Take the remaining flour and sprinkle 2 to 4 tablespoons over the onions and drippings in the skillet. Stir in flour with a fork or whisk, scraping bit of beef off of the bottom as you stir.

Gradually mix in the beef broth. You can season to taste with seasoning salt or your favorite seasoning.

Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return the patties to the gravy, cover, and then simmer for another 15 to 20 minutes.

Chicken Enchilada Ring





Ingredients
2 cchicken
1/4 cchopped black olives
1 ccheddar cheese
1 smcan chopped chilies, undrained
1/2 cmiracle whip dressing
1 pkgtaco seasoning mix
2 pkgcrescent rolls
1 smchopped tomato
1lime (juice)
2/3 cfinely crushed tortilla chips
salsa and sour cream


Directions

Chop chicken and add olives, cheese, chilies, Miracle Whip and taco mix. Seed and chop 1 tomato and add 2 tablespoons lime juice; add to chicken mixture. Reserve 2 tablespoons crushed chips and add remaining chips to mixture.

Unroll crescent dough and separate trianges. Arrange on round baking stone or cookie sheet making a circle with wide ends overlapping in the center and points toward outside. There should be a 5 inch diameter opening in the center.

Spread chicken mixture evenly onto widest end of each triangle.

Bring points of triangles up and over filling and tuck under wide ends of dough at center of ring. (Hang in there....almost finished!) Sprinkle with the 2 tablespoons crushed chips.

Bake @ 375 for 20-25 minutes. Garnish with tomato and serve with salsa and sour cream.
Tip: I used fully cooked chicken breast fajita s
